\nWe selected yuzu from Yuli, Hualien \u2014 grown by a farmer who happened to be the founder Tutu\u2019s fellow soldier during his military service. His orchard yields over 60,000 jin of yuzu each year, and from that, we carefully chose about 2,000 jin to craft this sparkling wine.<\/p>\n
The brewing process was far from simple: each yuzu was meticulously peeled, the pulp pressed for juice, and the rind candied to extract its natural fragrance. The result was then slowly blended with freshly fermented millet wine. This labor-intensive process preserves the fruit\u2019s unique freshness and layered aroma within the drink.<\/p>\n
On the palate, delicate bubbles lift a gentle yuzu fragrance. The finish reveals a hint of bittersweet zest and spice \u2014 reminiscent of that crisp citrus aroma lingering on your fingertips after peeling a yuzu during Mid-Autumn. With an 8% alcohol content, it\u2019s light yet expressive, perfectly pairing with grilled meats or rich, oily dishes for a refreshing balance.<\/p>\n
